Empty yeast packet into a small bowl, add water, olive oil and sugar. Set aside.
Add flour and salt to a stand mixer bowl. Add the yeast mixture in small amounts, mix between additions. Mix until a sticky dough forms.
Tip the dough onto a well floured surface. Fold & knead until a smooth ball forms, about 5 minutes.
Grease a bowl lightly with olive oil. Set the dough ball in the bowl & cover with a clean dishcloth.
Let sit for 1 1/5 – 2 hours to proof, until the dough doubles in size.
Lightly grease pan with olive oil. Move the dough from the bowl to the pan & gently stretch the dough to cover the bottom of the pan. Cover with a clean a dishcloth and let rest for an hour.
In the meanwhile, preheat oven to 450° and make the garlic sauce. Melt the butter then add the minced garlic, olive oil & oregano.
Once the dough is risen, gently press dimples into it with your fingers. Pour garlic butter sauce over and spread with a silicone brush.
Add the shredded cheese, making sure to get it in the edges & corners. Bake 12-15 minutes until the cheese is golden brown.
Remove from pan and place on a cooling rack. Let rest 5-10 minutes then cut into pieces.
Combine the maranara sauce, a few tablespoons of parmesan cheese & a squirt of olive oil. Mix well and serve with cheesy bread.
